No matter - this is the perfect dip for you. When I serve it at parties, the recipe is always requested.


It will create friendships where there were none.

It will convince others to hang on despite those pictures you tagged on Facebook.


Spunky Spinach Dip

Spinach Dip ingredients
Cast of Characters:
  • 8 oz cream cheese (softened)
  • 10 oz. frozen chopped spinach (thawed)
  • 2 cups of grated cheese (pick your favorite kicky version)
  • 14 oz. can of Ro-Tel. If you live somewhere without Ro-tel, first, my apologies. Second, it's diced tomatoes and green chiles.
What You Should Do With Them:
Preheat your oven to 400 degrees. Combine characters in a 2 quart oven-safe dish. Lika dis:

Spinach Dip
Leave out just a small handful of the grated cheese to put on top after it's cooked. Then, bake for 20 minutes.

You can serve with tortilla chips or my personal preference - plain pita chips.

  1. This sounds so good. I love all manner of spinach dips, but I have not tried this. Yum. And with Suzanne and Julia added in, it would be even better.

  2. Umm... if you live in a place without Rotel maybe you should move. This looks delicious.
    Other good Rotel recipe:
    cooked pasta, 2-3 diced chicken breasts, 1 can cream of mushroom, 1 can cream of chicken and 1 can Rotel and 2 cups of shredded cheddar, baked on 350ish for 45 minutes ish. Save some cheese to sprinkle on top in the last ten minutes. And I think you're supposed to cover it until the last ten minutes. Sometimes it bakes for close to an hour. Sorry this is a badly described recipe, but it's really good. ;)

  5. YUM!!! Thanks so much for sharing. We try to do simple things on Wednesday nights because we both teach church classes...my four-year-old son LOVED this! Yes -- EVEN the spinach! Wow! :)
